The recipe
This recipe is meant to evolve. I believe there is always a certain trick or a brillant idea that can make it better.
I am currently experimenting a version without gluten, I’ll let you know…
So, let’s see the current state of the recipe:
Ingredients (for 4 to 6 servings) :
- 200 g dark chocolate (70 % minimum). the one from Lindt is really good.
- 60 cl milk
- 2 big spoons of honey
- 1 bird pepper or bird chile
- 1 small spoon of vanilla aroma
Instructions :
- Put the pepper in mortar and cut it into small pieces (as small as you can)
- Cut the chocolate in pieces to make melting easier
- Warm the chocolate into a sauce pan with a good fire
- Add the vanilla and the chocolate
- Mix well to avoid burning the chocolate
- Turn down the fire if it starts melting
- After fives minutes, add the pepper and honey
- Keep mixing during 5 minutes until everything is melted
- Keep it on a gentle fire during 10 minutes and mix it really well just before serving (so that spice is uniformly distributed)
- Filter the mixture before serving with a strainer to avoid serving pepper pieces (important!)
- Don’t wait too much before serving, it needs to be hot (both meanings being true
) - A small cup per person should be enough. Some could be surprise by the taste. I just love it but better be carefull!
